Well, the picture’s a little deceptive because I won’t be demonstrating the method, but I will be signing Costco’s copies of Gluten-Free Artisan Bread in Five Minutes a Day! Zoe’s in Los Angeles at another event, but I’ll be at the store in St. Louis Park, at 5801 W 16th St., St Louis Park, MN 55416, from 1:00 to 3:00pm

  1. Can a bread machine be used just to mix ingredients? We are at about 3500′ above sea level.How does that affect GF baking?
    My first attempt at Master recipe #1 was a disaster.
    Just for future info. can quinoa flour be used to substitute at all.

    • Hi Sandra,

      Unfortunately, we weren’t able to test at high altitude and found very little information about the effects on gluten-free baking. In traditional wheat recipes we know that lowering the amount of yeast and increasing the strength of flour (more gluten) improves the success. You may want to try increasing the xanthan gum by a little bit, but I’m not entirely sure this will make the difference and may result in a gummier texture.

      I did try quinoa in place of some sorghum, but wasn’t as happy with the flavor. If you do add some, I wouldn’t replace the sorghum by more than 50% of it.

      I’m not sure a bread machine is large enough for an entire batch of our dough, but it may work if you’re doing just a half batch.

      I am going to post the master recipe from the GF book tomorrow, so there may be some tips that are helpful in there.
