As many of you know Jeff and I have spent the past year working on a new book, Healthy Bread in Five Minutes a Day: 100 New Recipes Featuring Whole Grains, Fruits, Vegetables, and Gluten-Free Ingredients
(HBin5). It is a project that started with you! Because of your questions, comments and requests for breads made with whole grains, seeds, nuts, fruits, veggies and even gluten-free ingredients, we set to work to create new recipes. We liked them so well, we decided to do another book. We’ve been playing with ways to make breads that are not only nutritious, but incredibly tasty and still fit into our busy lives. The methods will still be fast, easy and only take 5 minutes, but the results are wonderful breads made with ingredients that will keep us happy and healthy, no matter our dietary needs. Who better than a pastry chef and a doctor to write such a book?
Writing a cookbook takes a long time, not only to test and retest and then test again the recipes, but the editing and designing of the book after we write it. Although it is nearly done we still have more work to do before it comes out this fall. HBin5 will be available in the book stores on October 27th of this year. In the mean time Amazon has posted it for pre-orders for those of you who want to avoid the mad rush at the book stores!
In honor of HBin5 we’ve launched this new home page on our website. My husband Graham designed and built the site for us and Jeff’s wife Laura, who is also our copy editor, wrote much of it. We are so fortunate to have such a creative and talented team to help us. We want to thank them for all of their work! And THANK YOU for inspiring us to write our second book. As a thank you we are giving away 5 signed copies of our CURRENT book: Artisan Bread in Five Minutes a Day.
Here is a little glimpse into our life of writing HBin5:

On any given day I have about 5-8 buckets of dough in my refrigerators. (Yes, I have two and at the moment there is little room for anything but dough!) I generally wake up in the morning, shape and let rest several loaves of bread and then once I get my boys off to school I bake them. I have a double wall oven, nothing fancy, but having two ovens makes testing a dream. I can bake about six loaves at a time. Jeff is simultaneously doing all of this across town at his house as well. Between the two of us we could qualify as a chain of bakeries.

Once the loaves are baked and cooled, Jeff and I meet and have a tasting. We sample each others breads and do a critique on taste, texture, the look of the loaf and even the sound of the crust. If one of us isn’t absolutely in love with the bread, we discuss how to improve it and go back to the bucket! Sometimes we hit it on the first try and others take several variations. After a tasting we usually walk around the lake, to work off all the sampling and then head back to our kitchens.

As we test and talk and retest and change things and have others test for us, we write everything down. The stack of notes and versions of the recipes that you see here is only my stuff. Jeff has a similar pile in his kitchen, along with a testing schedule and excel spread sheets of all our progress. (It is a blessing to work with someone who loves excel!) This process is a lot of work, but we absolutely love it. I wake up in the morning totally excited to see what my buckets of dough have brought me for the day. As Jeff always says, “if your not having fun the bread won’t taste good!” You are so right Jeff!

Oh and let me not forget the photo shoots with Mark Luinenburg. He did all of the gorgeous photos in ABin5 and this time for HBin5 we have twice as many. He does wonderful work and is so much fun. And Nan the make-up artist who did her very best to make me look like Audrey Hepburn and told Jeff he looks like a young Paul Newman. She will forever be in our good favor!

I’m so excited about this book! I just started baking bread and have only done the Cooks Illustrated no-knead, and Deb/Smitten Kitchen’s light whole wheat, but I’m already addicted to Deb’s! Can’t wait to get *both* of your books and start baking my way through.

I can’t wait for the new book! My current fave is ABin5’s baguette. I just can’t seem to turn the page to make the next loaf because this one is soooooo good! Oooh, and when the new (healthier) book comes out, I can justify my hubby making the pecan rolls as often as he does.

My favorite dough is the light whole wheat – I love using it to make pizzas, pitas, and boules, so there’s a batch of it in my fridge at all times. I can’t wait for the new book – especially to find out what that gorgeous pink and green loaf is!

My favorite bread so far has been the Challah, but that might just be because it was the last one I made! It seems like every one I try is my new favorite. I can’t wait to get the new book, because I’m only having partial success in trying to incorporate whole grains on my own.

I keep coming back to the European Peasant bread. I always seem to tweak it a little each time, but it is so versatile, and my kids love it. One of the best loaves I’ve made is the oatmeal bread with dried cherries and pecans folded in. But I always seem to go back to the peasant dough because it can make anything! Just made Naan with it tonight. Will you post some of the “healthy” recipes for us to beta test?!

My all-time favorite is the Master recipe for boule. I always have a bucket in the frig and today, I made pitas! They turned out great!
I’ve made so many of your recipes and have never been disappointed. The granola recipe is a staple here also.

The two of you are genius. I have been baking my own bread now for three weeks. We have stopped buying store bought bread, and my family is now enjoying fresh baked bread every couple of days. I have two daughters that help me mix the dough (they are 2 and 3 yrs old!) They LOVE mixing days. Even my 3 yr. old said “I love mommy’s bread. It’s better than that old bread.” (read-store bought gunk) That’s a pretty high complement from a preschooler. We have tried the master recipe, the brioche (I did the caramel rolls and my own version of some cinnamon buns-yum), the american white bread, the light wheat, and tonight we mixed up the oatmeal bread and another boule batch. It is quick, easy, and makes me feel like I am not continuing to pump preservatives into my family. (I have a loaf of store bought in my pantry that still hasn’t molded after 3 weeks- scary) Thank you Thank you Thank you. I can’t wait for your new book. I will be first in line.

My friend Gale told me about your book not too long ago and I finally got a copy via the Library yesterday! (we didn’t have it at our local library so they check it out from another library so I have it for a month!) My first plan is to try the basic Boule then branch out from there! It’s such a great concept! I read your book half way through already and I wish I win to get my own copy!!!!

I have to pick one bread as my favorite? I have been known to sit and eat one whole loaf by myself in one sitting. I would have to say my personal fav I have made is with roasted garlic chunks and fresh rosemary. And sometimes I smear it with peanut butter. Gotta have my protein. I am putting the book in my wish list now.

OH MY GOSH! Im loving the look of the new book! ABin5 is my bible! I baught it from the book store and its in my kicthen when im baking and when i go to bed its on my bedside table cuz im ALWAYS looking at it when i have a spare min! I have made a few diffeent kinds of bread from the book but my household’s fav is the 100% Whole Wheat Sandwhich Bread recipe! MINUS the honey tho as we like the more savoury style bread
i also add wheatbran and flaxseed meal to this recipe! Its DELISH! Thank you both so much for giving me the confidence in myself to learn how to make bread from scratch!

Wow picking out a favorite – hmmmm – my go to recipe is the basic Boule – you can do so much with that – and you can play with it too – I have substituted 3 cups of King Arthur white whole wheat for their regular – I have used a cup of semolina in place of a cup of regular KA flour – and no matter what it has come out great.
Can’t wait for the new book to be out.

Must I really choose just one?!? I regularly make a batch of rye and use it for pizza on the grill with just picked from the garden tomatoes and basil with smoked provolone on it – ohhh, delish! I adore taking baguettes to wow my friends – which has cost me 3 copies of the book since they keep comandeering mine. The brioche is fabulous, especially as raisin bread. So there you have it, my favorite or maybe the top 3…
Can’t wait for the new book – the pics look marvelously tempting.

My absolute favortie bread is made from my own sourdough starter (over 7 years old now). The dough is slow fermented in the fridge and baked free form on my baking stone. Divine!

I am working my way through the book one type of bread at a time, and my family loves all the trials. I know the book says to let the bread cool before eating it, but I haven’t convinced my family of that! So far their favorite is the baguette. I would LOVE to get another copy of the book, so I can have one to lend and one to keep. And I am looking forward to the new book!

My favorite bread is the sourdough made by poilaine in the 7eme in Paris. But choosing a favorite bread is like choosing a favorite song. You can give a name, but at any given time there will be a dozen others that could have just as easily taken the honors.

I am too very excited about the new book. I have not anticipated a new book this much since the last Harry Potter. I have had to slow down a bit on the bread making as I put on a few too many pounds but now since you have the word Healthy right there in the title and Jeff is an MD I guess I will be back to baking more bread. Thanks again for all your hard work we appreciate it.

Looks like a long process in making the cooking book and we are so lucky that you both do all the work and then we just enjoy the book .
It is really difficult to choose a bread which i love from the Artisian bread in 5 minutes as every time i try a new recipe i tell wow to the resulats and i have tried sweet breads and everyday breads from the book, but i think i will write my daughters favourite bread from the book which i have made a lot and that is Brioche filled with chocolate Gnache.

I love both the Master Recipe and the Olive Oil Dough. I make pizza at least once a week from one or the other (sometimes more!) and have taken to making myself Naan for lunch and/or breakfast several times a week. (My husband and I both love it with refried or black beans and cheese!)

Writing a cook-book is far more work than I imagined…and sure excel guys rock…ask me…I had to train myself on excel (I am more of a pen-paper person) while I was working with HSBC, nothing beats it.

Hi guys. I check on ur site nearly everyday to see what’s new. So my favorite bread so far is the challah. However I have a bucket of brioche in the fridge to bake for the first time tomoro /later today so we’ll see. Last weekend I made the challah dough and went crazy. First I made the braided loaf. I then made the turban but instead of raisins I put cinnamon sugar and sliced almonds. After brushing with egg wash I also sprinkled almonds on top -Delish. A few days later… N I almost feel guilty telling u this, I made another turban, but this time I sprinkled cinnamon sugar and 5 Hershey bars on the middle before rolling up. I didn’t even bother to melt the chocolate- just chopped it up. It was so good I almost wanted to cry! So good it just felt wrong…LOL. I made it while visitng my family and my sisters n I just indulged. Anyway, since I made I thought about posting n so tonights giveaway gives ms an official opportunity to share. You have done a phenomenal job on this book and I look forward to the next one. I have tried to incorporate whole grains but often end up with a super hard crust, I look forward to TTY what you have come up with. Thank you

My only problem with Abin5 has been to translate the American cups measurements into grams and cl.
Sadly, I have to say it has been a major drawback in trying to re-create all your fantastic recipes…

My bread baking is a bit of a paradox, really:
As a young teen, I went through a phase of making bread. I bought a bread recipe book and spent hours making my dough, letting it rise, shaping it into loaves or individual rolls or plaits and then baking it. This was about 25 years ago!
For some reason, in the intervening years, I lost the art of bread and certainly the confidence I’d once felt. I became nervous about getting wrong something I’d once so wholeheartedly done.
Last year, a friend of mine gave me a soda bread recipe, she promised it was easy, fast and very forgiving. I made it once and was hooked – I suddenly rediscovered the thrill and sheer delight in making my own bread and enjoying it, still a little warm, straight out of the oven.
It’s time for me to progress on from my soda bread and branch out to make other, delicious breads. I have your site on RSS feed and love reading the posts about so many wonderful recipes. The photographs in particular always make me salivate. It’s time!

Hi, since I have the book my oven didn’t stop. I tested several dough. I like a lot the “Brioche”, very soft with a firm texture. The “Broa” recipe is very nice.
But the master recipe boule or the variation “European Peasant Bread” which I use for all kind of bread is my special of all.
I had made a Focaccia yesterday with it.

I don’t have the 1st book, but I think the master recipe is the best one! With that recipe you method was recognized all over the world, it’s easy, cheap and tasty, and with that recipe you understand that everything is possible as long as you have imagination. I am a lifetime bread baker but new to 5 Minute Bread, so have only tried the master recipe. I am looking forward to trying many more.
My husband & I are retiring and as soon as our house sells we will live full time in an 5th wheel traveling the US and Canada. Good bread is often hard to find in the small towns and remote areas we love, so baking it will be a necessity (and pleasure). I just purchased a Cuisinart brick oven for the RV and tried it with the 5 minute bread on a recent trip – a perfect combination!

I don’t have a favorite, I have many favorites. Right now the one I am making most often is the Italian Semolina bread. Sometimes when I cut it the sesame seeds fall off, so this last time I mixed the seeds right in with the dough. No more mess and same great taste!

European Peasant Bread is our absolute favorite. I have it in the fridge almost always. Children call it the yammiest bread. I make bread, rolls, even pizza of this dough. And what a relief to be able to make pizza fast “from the scratch”.

My favorite is the original recipe – the first one in your book. I have tried some of the others, but return to the original – it’s my go to recipe and sits happily in the bottom of the fridge just waiting for me to need more bread!

Peasant Bread is my favorite! Bought your book after my sister recommended it. I have given away eight additional copies since then! Can’t get enough of your wonderful breads. I just started making this about 6 weeks ago. I love it SO MUCH. I’m not a baker, and this book has made me feel so proficient. I love having fresh baked bread ALL THE TIME. This question is all about timing for me, because every week I seem to have a new favorite, but today my favorite is the 100% Whole Wheat. I love love LOVE this bread and will be using it for sandwiches, toast, the works.

After a surplus of pumpkin puree found its way into our freezer last fall, the pumpkin and oatmeal loaf has been a house favorite! That and I love replacing about 1/4 to 1/3 of the master recipe with whole wheat, ground flax, wheat germ, cracked barley – whatever I can find, it always turns out wonderfully!
… more importantly, WHAT is that purple and green loaf in the pictures?? I’m so curious! Is it wrapped? How is that done? So pretty!

It’s hard to choose a favorite, but I tried brioche for the first time this past week and fell in love, so THIS WEEK it’s my favorite. I made the berry lemon curd ring and it was fantastic but it was also just succulent when I made it into a loaf and a boule.

I have taken your basic recipe and made it more grain for us- adding rye and whole wheat for 1/2 the recipe and bread flour for the rest.

I have two favorites – the European Peasant Bread, which I keep going back to, and, well, the European Peasant Bread made into Brotchen using egg whites. The second is my favorite because I used it to introduce my German neighbor to the Artisan Bread in 5 method. She couldn’t believe she could make brotchen at home, and now makes it regularly.
I even use the peasant bread for pizza dough, kneading in a little olive oil. I also keep the non-eggwhite-version going perpetually so we can enjoy the deeper sourdough flavor that results.

My kids demand a rosemary scented loaf twice a week. I put the peasant bread dough and a bunch of rosemary branches in an iron pot. The lovely scent fills the house. I’m so excited about the new book. Congratulations!

Thank you for bringing this up. We sell many books in Europe and Australia and have included a weight conversion chart in the new book. The master recipe is written in weights, measures and metrics. We also have a similar chart for of all the most commonly used ingredients. It will now be much easier to make the switch to your preferred way of baking!

Lately I’ve decided to try faster methods since with the economy, I’m baking daily! This week I start construction of small (but useful & cheap to build) adobe horno oven! My baking just got cheaper! The light wheat has become our daily bread. My husband, who used to just shake his head at my obsession with good bread, swoons for it. I love the versatility and how much we’ve shared it with family and friends: It’s our morning toast with homemade jam, the pitas for lunchtime sandwiches, rolls or heavenly slices with dinner, the base for weekly make-your-own pizzas with friends, a nourishing part of meals delivered to friends celebrating births and coping with difficulty.
Being able to make our own bread so easily has been tremendously important to us as we’ve struggled with dietary issues the past two years — allergies, intolerances, cardiovascular concerns, and more — even as we try to spend less at the market. We’ve been eager to try more whole-grain options: Can’t wait to check out the new book!

To tell you the truth, I haven’t gotten past the basic recipe because I love it so much! After the first bucket of dough, I went out and ordered 2 more books — one for my daughter & one for a dear friend whose husband likes to bake bread. When I was at a quilting seminar this spring, a woman in our class who was from Germany was bemoaning the quality of American bread. Well, I started my 5 Minutes a Day spiel, and that got the whole room talking. Even the quilting instructor, a gentelman from Montana named John Flynn, chimed in about his love for the book and the technique. Maybe we could make a bread quilt? Can’t wait for the new book!!!!!

The rosemary-onion focaccia made with olive oil dough is an absolute favorite here! It’s become a staple for us in the summer when we grill nearly all of our meats. It’s almost gotten to the point that I need to make two of them for every meal because the kids devour it!
Very excited about the new book! I hope there will be plenty of nut- and soy-free recipes, though, as my husband and daughter are both violently allergic to tree nuts and soy. (I always get a little nervous at the mention of “gluten-free” because of that!)

My husband and I just celebrated our 50th wedding anniversary. In the early years relatives from Chicago would bring us wonderful loaves of what we called “Chicago Rye” bread. The sources for this bread have all but disappeared from Chicago. At the time, I baked only soft white and whole wheat bread. As years passed, I came upon an old recipe in the bakery cafe my daughter owned at the time. It was a recipe for rye bread that looked close to the well loved original from Chicago. It took a complex variety of flours and much time to arrive at the finished product. It was delicious, although not enough oven spring. It took so much work to prepare that I finally abandoned the recipe. Then I was introduced to Brother Juniper’s slow rise. I didn’t make rye bread, but the recipe for the crusty bread with whole wheat flour became our family favorite. It was as close to the pleasure of eating Chicago Rye that I could come. I made this bread often, but not often enough, because of the time involved. Enter… Artisan Bread in five… When I made the Deli Rye for the first time, my husband swooned. Since then our bread of choice is Deli Rye. It’s even better now that I bake it in a cast iron Dutch oven and a Clay Domed baker. Actually, the rye is pretty versatile. I was teaching a group of Institute for Learning in Retirement folks the basics of “bucket bread”. I was ready to have them help shape a loaf of light whole wheat bread, pizza, and naan from the dough in my bucket. I opened the bucket and looked into it. Imagine my dismay when I saw little black flecks in the dough! I had a mis labeled bucket of Deli rye with me. So we enjoyed making and eating a loaf of rye bread, rye pizza, and rye Naan. Have already pre orderd HBin5. Am waiting with anticipation.

I think I have 2 favorites… I LOVE the olive oil bread. It’s so versatile, I use it as made in the recipe, sometimes, I’ll add a pinch of RoseMary and garlic to the dough, or just sprinkle over the top when I am ready to bake, I love to make it as breadsticks, too. I also LOVE making homemade soft pretzels with my children, and the Rye bread is wonderful! (Of course, my kids prefer the pumpernickel..) I am VERY excited about the new book!! Also, I love making pizza crust form the Olive Oil dough!! OK, That’s more than 2, but they really are all so good! It’s hard to choose just one.

My favorite is the European Peasant bread, because of the great versatility with a bit of whole grain. I make the bread as boules, rolls, naan, pizza. Yesterday and today it will become focaccia for some tasty chicken pesto sandwiches. I am really looking forward to the next one, have given the first as gifts 5 times, but have inspired others to buy it, too. I am also curious about the gluten-free — would love to make some g-f bread for my brother, but wonder if my stone, pizza peel, etc. might be “tainted” with wheat.
I also think you ought to have a section of Zoë and Jeff’s keep-slim secrets! (I walk around the lake, too, but it’s not enough for how much I would like to indulge in the bread.)

I love the challah and brioche. I’ve been able to convert them to egg free, too (I have egg allergies that developed during my last pregnancy). We use them for breakfast treats such as cinnamon rolls, caramel rolls, cinnamon bread, donuts, beignets, hot cross buns, regular brioche e tete and turnovers. My family (and I) thank you for this book and can’t wait for the release of the next. It’s already at the top of the list for my anniversary present (beginning of October).

I love the light whole wheat for pizza, but I often like to substitute white whole wheat flour for regular whole wheat! I’ve baked bread for more than 30 years (since I was a girl in the kitchen with my Mom) – everything from regular sandwich breads to levain/sourdoughs — but I’d gotten away from it with an active 3 year old and 5 year old. Your ABin5 has made it possible for me to make bread any time I want and still keep up with my kids. Thanks so much ! Looking forward to book 2!

Wow that purple/red one looks very good. I can’t wait for the new book to see what that one is. My favorite from the book is the olive oil dough. I use about 6-10 oz of whole wheat flour to it. I love it because I can do so much with it. I can make pizzas, pitas, focaccia, hamburger buns, or even just a loaf of bread for dinner. All that out of mixing dough once. Thanks!

It’s really hard to pick a favorite -but I’m going to have to vote for the light wheat recipe … it’s sooo versatile.
I’ve given away many copies of your ABin5 for gifts to family – and have shared my copy with others – who in turn have purchased their own copy. Everyone raves about ABin5 and thanks me for re-opening their eyes (and stomach) to making their own bread. One of my friends says ABin5 has changed her life – it’s inspired her to cook and bake again … and she shares her creations when we get together for dinners. So… we all benefit!

What beautiful pictures, of you both and the bread! I am completely intrigued by the red/purple one and can’t wait to buy your cookbook.
My favorite bread is more of a memory bread – my Mom used to buy what she called “Russian bread” from a now closed bakery in Portland, OR. It was dense but chewy and had these amazing pockets for melty butter – kind of like a cousin to english muffin bread, but chewier. I wish I knew what it was called so I could recreate it. I’m not even sure my memory is reliable enough.

Hi Guys!
How to choose a favorite! My (our) brioch dough is fantastic! It rises (!) to every occasion especially the Mother’s Day Berry pudding. The color! The flavor! The compliments! And it’s pretty impressive on its own.
Making individual mini baguettes with the basic recipe is a crowd pleaser too. I have the special curved pans and can make 4 at a time!
I could go on and on!

WoW! Sharp new site! Congratulations on all of the good news! When I clicked my bookmark I thought I’d somehow gone somewhere else by mistake and was getting ready to go back to bookmarks to try again when I spotted the oh so familiar boule on ABin5! I have to agree with Brie way up the line…my favorite is probably the last batch I made, whatever it might be most recently. For me that’s the buttermilk as who can not love something that can be the most marvelous cinnamon bread in the world, wonderful basic loaves and boules to enjoy and to share and most recently the base for a breakfast pizza! (Precooked turkey sausage, thin slices of cheddar and then I broke a farm fresh egg on top just to see how that worked… the things you inspire us to do with your bread is endless…BTW, let the pizza cook just a bit before adding the egg if you want the yellow to stay soft, it was the neatest thing, I’ll have to make pictures next time! And of course I got the idea from Jeff’s egg in a nest type muffin from a few months ago!)
I’m really looking forward to HBin5; I already add bits of whole wheat to my mixes and things like barley flakes and ground flax as the mood hits. Just imagine if I had a real recipe to follow…and I can’t wait to find out what that gorgeous red load with the green interior is. Forgive me if you’ve already described it in a previous reply….no time to read them all right now! And for the record, I’ve had HBin5 on preorder for a couple of months now…but a signed copy would be extra special.

I bake several times a week, but until now, I limited myself to cakes, brownies, bar cookies and things that DIDN’T involve yeast, my final frontier. My Polish grandmother was a pro with yeast breads (she used fresh yeast and never needed a thermometer to get water temperature accurate, nor did she measure ingredients), but that gene seemed to have skipped my mother and myself. Previously, my sad attempts at bread turned out like bricks, particularly when using refrigerated dough. Enter “Artisan Bread in Five Minutes a Day;” using the master dough recipe and its variations, I’ve whipped up divine caramel pecan rolls, decadent chocolate brioche, almond bostock, and more. Remember: my first breads turned out like bricks, so having fluffy, flavorful loaves on my first try was nothing short of a miracle. Thanks to your book, I’ve been appointed the official family bread baker!

My family is addicted to bread. I make a loaf every other day if not more often. Our favorite? We love every recipe that I have tried. Grilled pizza is one of our favorite meals. I have used the master recipe, the peasant bread dough, the light whole wheat dough and the semolina dough. All are good. I have preordered 3 copies of HAB in 5 from Amazon.

Our absolute favorite bread is the European Peasant. It is so delicious and so versatile, we never tire of it. Whenever I make any kind of bread to take to a party, Euro Peasant is the base dough I use. I always keep a bucket going and mix the new batch right on top of the old.
I’ve also made the Master Recipe, Deli Rye, Semolina, Light WW, !00% WW, Broa, Bran-Enriched White, and many breads with additives: herbs, Olive, Sun-dried Tomato, Red Pepper Fougasse, Stromboli, Calzone, improvised raisin bread, improvised garlic bread. And then the flatbreads – pita, Naan, Za’atar, etc.
Haven’t progressed to pastries yet but I plan to try Challah soon.
My own book is heavily marked up with notes because I weigh out the flour (learned the hard way) and I am always tweaking the amounts. I would love to win a new signed copy!
And another me too for the identity of the red crusted bread with the green interior – please don’t make us wait until October !

I ALWAYS have a batch of your light whole wheat dough in the fridge. We love it baked as a boule, in a baguette pan, rolled with spinach, cheese, nuts, leftover chopped meat in it, as a base for pizzas–lots of ways.
Looking forward to your new whole grain book. When I purchase bread it is always whole grain.

Our all-time favorite is the semolina bread with sesame seeds!
It’s great for pizza also. Being Italian and having many Italian friends from Italy – they LOVE the bread – some say it’s the best they’ve ever had.
I’ve taught my daughter, daughters-in-law and many many friends how to make this wonderful bread.
There’s always a bucket of dough in the fridge and fresh bread or rolls on the table most days!

We really love the bran enriched bread – can’t wait for more whole grain options! Right now we’ve got a combo bran/olive oil dough going and just took hamburger buns out of the oven! Can’t wait to see how they came out. (We also used 1/2 white whole wheat and 1/2 white flour…it’s so fun to experiment!)

I am so excited about the whole grain book. I have been experimenting on my own with the master recipe subbing in White Whole Wheat, Regular Whole Wheat, Chunky 9 Grain Blends, Oatmeal, Rye, Cornmeal, you name it. and what is amazing is that nothing I have tried has failed yet. It is fool proof! I also love the Challah, but it will be great to have more full recipes. I just mixed up another batch of olive oil dough. The only thing I don’t like is that my fridge only holds one bucket at a time!

Tough to pick a favorite — probably the Semolina or the Peasant loaf. I also LOVE the Sticky Buns made from the Brioche dough.
I’m a historical re-enactor and today, during an event, I baked the Peasant loaf in my cast iron oven on the fire. It drew lots of ooohs and aaahs!

My current favorite bread is a wonderful black Russian pumpernickel – with chocolate and coffee, carraway seeds and many more wonderful aromatic ingredients, though the recipe itself is a piece of cake (as it were!). Although I’m unlikely to stop liking it, it’s hard to predict whether I will have found a new keeper by next week!

I just found out about your book about a month ago, and already have made many of the wonderful recipes. I recently had to stop working because of health problems, and I initially started to bake bread at home to save money. Well, your recipes are so easy and delicious that even if I wasn’t saving money, I would still make them! I Love the Corn bread with Cranberries…something about yeasted corn bread…oh, so good…and to think I used to pay $5.00 a loaf at our local bakery!

First I would just like to give you a little back ground info…..I have never baked bread….ever. A few weeks ago I came across an article in MOTHER EARTH NEWS in reference to your book and thought this would be perfect to incorpaorate in to our new farm plan. You see, my husband has been a farmer for the last 6 years with little success. Due to my extensive traveling for work, I was never home more than a week every 2 months and left the business in his capable hands. Well, now with downsizing everywhere, I have been home for 6 months and in that time working on new ways to make our farm profitable. I started with the idea of Farmers Markets. But, until the gardens are producing. What to do?
Then I found this article, bought your book, and quite quickly have become a pretty darn good baker! So, while other ventures are in the working out phase…I am steadily producing beautiful loaves of ABI5 loaves and having fun, fun, fun! My husband has been the very willing test subject and after 2 weeks, is already talking about buying me another fridge to store my dough in. LOL!
My fav bread so far is the Cheddar Bread. Very naughty bread! I ate the whole loaf over the course of one day. I’d just go slice a peice here and there…..and OMG…it was gone! LOL!

My favorite regular is the sourdough-ish standard bread from well aged dough. However, from the variants my favorite is the flatbread for Za’taar bread — I’ve always loved it, and hadn’t found a good base bread for it before.

There are still crumbs (and caraway seeds) on the cutting board from the 2 loaves of rye that my household (of two!) finished in less than 36 hours.
Despite the mad rush on the most recent loaves, the dough we make most frequently has been the olive oil, which is such a fantastic pizza base. We also use it for baguette when we need one… and my husband has more than once expressed his undying love for the fougasse, which we have many variations of, most frequently using a jarred (Trader Joe’s) red pepper and eggplant spread topped with marinated artichoke hearts. It’s so satisfying to pull out of the oven, both to the eyes and the palate!

I “won” your wonderful book in a little drawing a friend on a forum had and it has become my most used cookbook ever. I love cookbooks and have oodles of them looking pretty on my bookshelf but this one is actually USE!!
I was always a little scared of yeast bread and had attempted only a few with so so results. Now I feel like I could attempt just about anything with the recipes in your book. I have tried a few, but the one I keep coming back to over and over is the Deli Rye recipe. In fact I have some in the fridge now crying out to be made. I will be happy to buy your new book…I feel strongly about making a financial contribution to a cooking revolution that has changed my culinary life for the better! My favorite bread dough is the basic boule because it is so simple. The recipe is easy to remember and easy to teach. My friends mom came to visit from Liberia and when I told her about this bread she nearly jumped out of her seat when I said it doesn’t have to be kneaded! From one batch, we made boules, dinner rolls, pita bread, and naan (the favorite). When she goes back to Liberia, she is going to share the technique with the rest of the women in the village. I’ll be sure she leaves with a copy of your book in hand. Thanks! P.S. Can’t wait for the new book to come out so I can start to bake more healthy bread for my personal trainer boyfriend.

Our favorite bread is the European Peasant Bread, which I have used for everything, including pizza–even rolling raisins and walnuts into it! I have to tell you, though, that a good friend ran out and bought ABin5, based on the Deli Rye loaf I brought to church. (The rye also makes great thin bread, baked with a little oil and onions on top.)
I have been baking bread for 35 years and never have had better results, with so much fun and so little mess! You should see my book–marginal notes and stuffed with print-outs from your website. I would love a signed copy of ABin5.
P.S. We have a 120 lb. hound-mix dog who loves to lounge, but the minute she hears the bread knife start to crunch though a fresh loaf, she is right there “rooing” in anticipation of a piece of crust.

My favourite is the Master Recipe Boule made into the Wreath Bread, because of the story behind my first attempt at it …
Last Christmas my sister and I had planned to take my elderly mom out for lunch on Christmas day … but it was not to be. Overnight snow made the roads treacherous (first white Christmas in 4 decades here!) and, very sadly, my sister’s mother-in-law passed away that morning after a long illness. A very kind neighbour, knowing my situation, invited me over to have Christmas lunch with her family … so that morning, with some artisan bread dough conveniently in the fridge, I made my first wreath bread and it turned out SO beautiful! It was a huge hit at the luncheon when it was unveiled! Brightened up my day on many levels and I felt grateful to be able to “break the wreath bread” and enjoy it with friends, remembering the “circle of life” at a difficult time.
I can’t wait to try out the recipes in your new book, and to share your “Healthy breads in 5 minutes a day” with more friends and family!

I just ordered your book from Amazon – I can’t wait to try it! I am slowly trying to ease myself into more homemade items after reading about food recall after food recall in the news and bread is one thing that has always intimidated me. I hope this book is the answer! As previous posters have already said, I am curious to see the new one and what kind of bread the colorful one is!
I have to say that currently my favorite bread is one my uncle makes – craisin pecan sourdough. Yum!!

I’m new to ABi5 baking, and am still working on perfecting the Master recipe. I have a very old oven that doesn’t heat evenly or consistantly. Is it sad that I’m considering buying a new oven just so I can bake better bread?!

I have a suggestion for people who are looking for the help you have posted in the past. The Safari web browser has a search feature, press command-f and you can see what matches on each individual page. I’m sure other browsers have this too. I realized this after I read the zillion comments on most of your posts going back to the beginning.
My favorite bread is deli rye and light whole wheat, as I noted before
The best thing for this website would be to make the comments searchable, because they’re so helpful.

Love all of it. I make small rolls with a cross cut on top from the basic recipe because I can’t get enough of that crusty top. I also stuff the bread with cheddar, just like you do for the paprmesan and sundried tomato bread. Best, best bread book ever, I can get rid of all the others I own.

Saw a short article in Woman’s Day Magazine recently with mention of your book and website. Tried the basic dough recipe and have made 3 of the four loaves it creates and absolutely love it! I’ve tried repeatedly to make a light, soft centered white bread and I usually come out with something tough and dry. Each loaf makes just enough for our small family of three with no leftovers and we can have fresh, warm bread anytime! Will be purchasing your first book and will most definitely be buying the second. Congratulations and I’ll be looking forward to using your recipes!

Very excited about your new book! I am trying to convert completely over to handmade breads, no store bought, and want to go as healthy as possible. The more whole grains, the better, but my all time favorite is anything using authentic, wild yeast sourdough. It feels like alchemy when that dough raises without commercial yeast.

So far my favorite bread id the original Master Recipe, though I have just mage braided Challah and it turned out superbly, just like the kind I got on Long Island.
as others have said, the Master is so versatile/ I have used it for bread, salt sticks, pizza, cinnamon buns, and garlic knots. Iy is a very forgiving recipe, so if the dough is a little wet or a little dry, your bread will still be successful. I have also taken a loaf out and sfter it has cooled a bit, discovered that it could use some more baking, turned on the oven, out the bread back in, cooked it some more, and it still was tasty as could be.
I can;t wait to try the Challah for cinnamon rolls. and in my search for Long Island Bakery items not available in Vermont (not as good anyway if I can get them) are Deli Rye and Kaiser Rolls (if I could only get Kosher salami, corn beef, or Pastrami). bagels, and soft pretzels (not really a bakery item but sold by street vendors).
Thanks for making it possible for me to be creative, a task that I can do with my disability, and the enlightenment for me to do new things and be successful, even if they don’t apways turn out exactly right.
I am looking forward to the new book because my wife wants healthier recipes, even if I am satisfied with not-so-healthy recipes, we need to make each other happy in life, so I am happy to bake her the healthy stuff! any excuse, right?

I love the olive oil dough. I coarsely chop kalamata olives, dredge them in flour and put them right in the dough mix. Then I make Kalamata Olive Loaves and paint them with a cornstarch wash. Delicious! Everyone who tastes them thinks I’m a genius–it’s really you two.

I’m very excited about the second book coming out, as I’ve recently been diagnosed with Celiacs disease, so I have to cut out gluten from my diet- no small feat for someone who LOVES baked goods. I have only just discovered the recipe a couple of days ago. Today I’ve bought my bucket and to make my first loaf. I can’t have a favourite loaf just yet as I haven’t cooked and experimented with any breads yet.
My birthday is in a couple of weeks time and these series of books are high on my birthday wish list!

My favorite would have to be the master recipe. It is so versatile. I always have it in the fridge for the impromptu pizza, boule, sweet loaf with cinnamon and sugar, healthy loaf by adding in a whole grain baking blend, wrapping around hotdogs before adding cheese and cooked bacon and a funky veggie loaf by adding some Knor vegetable soup mix. I could go on and on with the many different breads I have tried with the master recipe. I usually have another bucket of the other recipes in the fridge at the same time, but the experiements are great fun! Thanks for all your hard work on the new book. I can’t wait for it to come out to continue expanding my bread baking repertoire.

My favorite dough has to be the Master Recipe because I have had so much fun experimenting with variations. I used to think that bread was finicky and your recipe is so forgiving that it has unleashed my creativity. My favorite was fresh rosemary and a sprinking of kosher salt, served dipped in olive oil and parmesan.
I want to avoid preservatives, so I like baking my own bread. However, white bread is more of a treat for me. I usually buy high protein, high fiber, alternative grain breads. I’m really looking forward to the new book so I can start making some of these fresh at home.

Your book has been the biggest change and innovation in my cooking this year! I mostly make the master dough and use it for different things like bread, pizza, savory breakfast muffins, cinnamon raisin bread.. The most interesting idea was my recreation of a fettucini alfredo pasta bowl like you might find at a popular pizza chain. It turned out great! Thanks!

I ordered your book from Amazon and made my first batch of the plain white dough last night…I baked some this morning with a bit of an amendment…I covered a baking sheet with flax seed and placed the loaves on the sheet to rest, then into the oven placing the baking sheet on top of a flat cast iron griddle (9 X 13) since I didn’t have the recommended utensils…OMG it worked! It was soooo good… I’ve been grinding my own grain and baking bread for years, but this was something new and easy and I wanted to try it…GREAT JOB!

My favorite bread – well it was the original basic dough. Having a fresh boule to devour every day was an amazing experience. I went through an experimental phase of adding every grain and flour I could find, but have now settling into a new period of pizza, fougasse, and foccacia. I JUST received your ABin5 book in the mail! I’ve been so excitedly awaiting it since I first came across your site and ordered it. I have already tried the Bran Enriched White recipe that I found online and loved it. Then I kinda veered off in my own direction and.. well, then I stopped and waited for the book! Okay. so I learned I am not able (yet) to play with the recipe. After much reading, both on this website and others, I have decided that I will do what others are doing: Start at the beginning of the book and try each recipe in turn! I see many many that I’d love to try. So, I’ll go one (or two) at a time and work my way through. THEN I’ll tell you my favourite! Mind you, by then I’m hoping to have HBin5 to start all over with!
So, for now I can only say that I love the Bran Enriched White… and so does my son. (we’ve been doing a little {mature} fighting over the bread I’ve been baking so far: “DID YOU EAT **ALL** THAT BREAD???!!!)

I think so far my favorite is still the master, and I try to leave the dough in the fridge as long as possible to develop the flavour and sourdoughy-ness, and I don’t wash my container. I gave your book, a peel and a stone to each of my kids. (I make do with a cast iron grill and no peel, but that’s another story.) Whenever I try a new bread, they get a review and tips and goading from me until they try it. My current fav is naan. Good grief—no matter how tired you are, or pressed for time, you can make naan, which can stand in for a tortilla or pita or pizza crust if necessary. Thanks for revolutionizing bread baking!

I too am a new convert. Way back when I was a new bride, I came across an old paperback recipe book about bread baking starting with french bread. It explained the how and why and what for of yeast. It truly took the fear out of bread baking. My husband proceeded to buy me a Kitchen aid mixer and grain mill so I could make our own bread at home. Life and times changed and I got away from making bread even though I truly enjoyed it. I found you and your book in Mary Hunt’s Cheapskate newsletter. I started baking the original recipe found on your website with bleached flour before I could get to the store to buy unbleached. I am in love again. I haven’t even baked in the oven yet. Only on the grill in a clay baker and pizza about 3 times a week. So I can’t say I have a favorite yet but am excited to be baking again! …and so is my husband.

As a recent graduate, I am living a nomad’s life and don’t even have a kitchen to test out the recipes in ABin5… even though I do have a ceramic pizza stone and a “dough bucket” waiting in the wings. I’m sure one day I’ll have a favorite among those breads, but my true favorite bread is my dad’s potato bread. He used to bring a couple of loaves when he visited me at school and I would suddenly be very popular in the dorms. There is still nothing better than warm potato bread with strawberry jam.

My personal favorite is the deli rye, it makes the most amazing grilled cheese. I always have a loaf of the rye and the light whole wheat ready to go in the fridge.
I love the brioche for sweet rolls, but the challah makes the most amazing donuts ever. Next up for me is olive oil dough for pizza, and the deli rye made into reuben pockets.

I like to make the olive oil bread with part whole wheat flour. It is great as a boule, but I like to have it around for making quick pizzas! My absolute favorite (that I can’t make all the time, but would if my calorie intake would allow) is Brioche–Sticky Pecan Caramel Rolls. Also..uh, beignets! Soooo good.

Zoe – In a post wayyyyy up on the

I LOVE your book!!! It has changed the way my kitchen looks and smells! It seems I’ve always got a bucket of dough either on the counter or taking up a big section of my refrigerator! And the oven always has my baking stones and a broiler pan in it, so if I bake cookies or something, I remove the whole shabang and put it on the counter until I’m done so I can put it all back together ready for my next loaf of bread or pizza! It’s so much fun baking bread with your recipes and my family loves the results!
Thanks for the great techniques!

I love the basic Boule – I add fresh Rosemary and Thyme to the dough, then dip it in olive oil, salt, pepper and fresh grated Parm cheese. Love it!

I can’t wait for the new book! I try to incorporate some whole grains into my breads but am not all together pleased with the results. My family ADORES the ABin5 Challah bread. I also use the olive bread as my staple bread. Makes great rounds loaves and pizza crust. The family doesn’t love the harder crunchy crust of the master dough (although I do), and they prefer the olive oil bread better.

I have been using ABIN5 constantly since it came out. Every recipe has been a success. Just this morning a friend mentioned some book she needed to get about making bread in a bucket and pulling off a gunk to bake. I knew right away she must be talking about ABIN5. My favorite bread is the 100% whole wheat – it’s so good, so comforting. It’s my go-to bread to bring to people when they’ve just moved or just had a baby or just need good bread.
I make the light whole wheat dough a lot more often though. It usually gets turned in to pizza or za’atar bread.

We all got a big kick out of your comment on page 58 in the book about European immigrants enjoying a good piece of bread more than a good dessert. Being a Dutch immigrant myself, my kids have had to listen to me for the past 30 years about American bread that is just too sweet and spongy. Our favorite bread is the bran-enriched white bread, which reminds us a lot of the good Swiss bread we had while we lived in Switzerland for a while.

I absolutely ADORE your book! Even though I am a seasoned baker of homemade whole wheat bread, I had many failed attempts at whole grain artisan bread (and few good ones) before I read it. Now, I make beautiful whole grain artisan bread all the time for family and friends, with much less effort than the failed attempts. The first time I made the Boule, my 14 year old son declared the crust “Awesome”. The second time I baked a loaf he declared “you must bake this everyday”. Something tells me I could bake every recipe in the book but we’d still come back to the master!

“Favorite” is kinda limiting, isn’t it? When we were in New Zealand, my 5-yr old and I loved making the light wheat (with herbs) and kept a bucket of brioche for the occasional blueberry-plum bread (from something we saw at the local farmer’s market). We gave ABin5 lessons to some NZ friends and left our stone and peel with them. Now that we’re back in California, we’re making pumpernickel constantly. … still not an answer to the favorite… perhaps my favorite (most impressive) for company was the braided spinach-feta-pine nuts bread (added lamb sausage when in NZ).
I’m looking forward to the new book – I’ve been adding oats and various other grains a bit haphazardly – I’m looking forward to reading the wonderful breads that you’ve created. Cheers! Linda

I’ve only just discovered ABin5 and we use the basic master recipe. Its winter here so it makes a great loaf to have with soups, stews, as well as toasted in the morning. Haven’t had a bad loaf of the basic recipe yet!
I do need a bigger fridge now so I can experiment but still have the master dough on the go!

In your next book, can you include workouts? Baking several times a week and eating perfect bread is a challenge to my wasteline. And I do mean wasteline, not waistline. Two months into the bread-baking diet.

The brioche — and specifically done as almond brioche — is a favorite treat. I’m relatively new to the book, but the master recipe also is a superstar and so versatile! I could never have the discipline to do small tastes of that or any of the other breads in the book, particularly over months and months of recipe perfecting. Zoe and Jeff must be very, very disciplined!
I’m a cook, not a baker. That said, in the year before I *just* got the book “Artisan Bread in Five Minutes a Day,” I’d made several breads off a yummy milk bread dough (and played with forming and braiding the dough), made a few delicious loaves of challah, baked up a couple of salted rye breads from an Inn at Little Washington recipe, baked some small kalamata olive and olive oil infused loaves and finally had some success with the no-knead breads popularized by Mark Bittman (and given analysis by Cook’s Illustrated and others).
Our family also has long baked yeast rolls off of a very wet dough (sound familiar?) that can be stored in the refrigerator for a couple of weeks at a time.
So I wasn’t a complete novice before discovering your book. And I didn’t find bread baking a chore, at all. The reward of a fresh baked loaf (or two or three!) coming out of the oven is a pretty powerful incentive. Still, it wasn’t as easy or instantaneous as I’d have liked. Your technique has changed that. Now, my biggest problem is finding a way to burn off all those delicious breads I keep baking and eating — and finding more space in the fridge (especially during the summer months when dough is competing for space with bushels of fresh market peaches)!
Incidentally, I use my thin cutting board (or sometimes a sheet pan) with parchment paper as a makeshift peel for transferring loaves.
I’m really looking forward to the healthier, more nutrient-rich bread options in the new book. And I’m eager to know more about that red bread in the pictures above. Please, tell us more!

Oh, your methods have changed my life! I want to tell everyone about it. I would love to get a copy of your book to share with my family. Thank you for not only teaching me with one magazine article that I can have fresh bread all the time, but for giving me the confidence to work with dough. I make the basic boule recipe and I love that I can do whatever I want with it because I don’t see dough as some big scary super squishy monster waiting to turn into a brick because I didn’t hold my tongue on the proper side of my mouth when I looked at it. I love that I can tear off a hunk and pan fry it just for me, or make a loaf when there are others around. Basically anything I want to do. I can’t WAIT for the new book to come out. I lost the recipe for this bread more than twenty years ago and have searched everywhere for it since. It was plain homemade bread seasoned with herbs mixed in, particularly marjoram and rosemary. It was absolutely incredible with my homemade chili. The original recipe came from the Ladies’ Home Journal of about 1974.

I got the book three weeks ago and so far I’ve made the master recipe, deli style rye, and olive oil dough. I think my favorite is a toss up between the rye and the olive oil. I made pizza for dinner the last three nights and everybody said it was the best they ever had. Next I want to try making pretzels out of the rye dough.

ABin5 is the only cookbook I have that I gave it’s own dedicated bookmark. I have been buying flour in 50lb bags and going through them in less than three months….fantastic bread! Amazing concept! My favorite (at the moment) is the 100% whole wheat sandwich bread, although I sub 2 cups of white for two of the wheat (or my daughter won’t eat it) and add a cup of cooked wheat berries. Yum!

So after a day of my master recipe mix being in the fridge I finally cooked it, however I think I mishandelled it too much and came out rather dense but delicious and a great crust. I’ve already troubleshooted the causes from this website, and am about to bake my second loaf soon!
As soon as this dough is finished I have plans on baking the blueberry lemon curd ring – unknowingly I made some microwaveable lemon curd last week after being inspired from an episode of Australian Masterchef, now just need to get some blueberries!

Wish I could put a picture here- have tried the recipe from a video I stumbled across!! Liked it so much that this method will literally be a part of my life for the REST of my life. Before this yeast and I did NOT get along. I don’t know what it was, but I simply could NOT make anything with yeast. Overnight, the bread is good enough to be sold at a pricey gourmet bread shop- or would that be shoppe? lol THANK YOU for this – we now eat the master dough several times a week- AND I’ve also gone ahead and used your tip to keep the bucket uncleaned for a more sour taste in the subsequent batches.

Hi! Congrats on the new book. I am really looking forward to getting it. Oct 27th is the same week my wife and I are expecting our first baby. Quick and easy breads will be very important those first few months..err..years!
So far the whole wheat and basic recipe are all I have tried and my neighborhood loves them. Ive even inspired several to start making it themselves.
I will be making the naan tonight and im sure it will be great.

I’m slowly working my way through the first book, playing with the recipes and having fun. The pita breads with the semolina dough were great. I made the pumpernickel dough last night with the Zoe’s recipe for caramel color. My first loaf today will be stuffed with dates and then I want to try it as a pita bread.
I’m preordering the new book and excited about the new recipes. My poor bread machine is getting dusty.

I worked in Belgium almost twenty years ago, and really enjoyed the bread — so much so that I plan to build a brick hearth someday! Your book has been a hot number at our library, and I finally have it. Your methods can truly make home made breads the “staff of life”! We will soon make up batch of your American Delicatessen rye bread and enjoy Rubens at Ravinia while listening to our wonderful Chicago Symphony Orchestra!

I just circled October 27th and as soon as August hits I’ll be driving my family nuts with the countdown. (Now would be a bit early . . . though I would dearly love to.) I have friends who I’d love to pass the book on to, but because there are food allergies it didn’t seem wise – which is one of the reasons I’m so excited about the new book.
In some ways I can’t imagine it being better that the first (love the master recipe!), but the previews you’ve posted in the past couple months have been tantalizing. (Hard German rolls and lemon brioche – need I say more?)
Can’t wait!

My family loves the basic boule. I substitute a little bit of whole wheat flour instead of using all unbleached flour. We use it for pizza dough and calzones, too.

Our favorite bread is the Master Recipe. In fact, my son has four loaves rising on the counter as I write this. He is taking two loaves to a work lunch tomorrow and the other two on a weekend camping trip. I am so looking forward to your next book. My only excuse for not having found your book earlier is that we’ve been homeschooling for the last year and up to our ears in educational theories. My bread baking has been limited to the tried and true (although we do grind our own grain).
I’ve been trying for years to bake the perfect brotchen, whole wheat loaf and daily bread. For Mother’s Day I received an Emeril bread baking machine (because it will make baguettes). It’s easy and quick, but not the same thing as ABin5.
I’ve used the Master Recipe, using parchment paper on the stone as well as my covered clay baguette mold and my Romertope covered clay cooker, all with the same success (even when I forget the pan of water for steam). After making two loaves in the clay cookers, a 10 year old guest couldn’t stop eating the bread! She declared it to be the most delicious thing she had ever put in her mouth.
I’ve ordered the first book, since I have so far only used the Master Recipe, and am anxious to try all of the other recipes. All I can say is “Thank you, Jeff and Zoë, for a marvelous method.

I have pre-ordered your second book and am anxiously waiting. It is so hard to choose 1 favorite bread from your first book. I have loved every recipe that I have made so far. I use your master bread recipe all the time for just about everything, but I also make the ‘Vermont Cheddar Cheese Bread’ quite often. It makes the absolute best grilled cheese sandwiches – so, I guess I’ll call that one my favorite. That will work, until I whip up a batch of the ‘European Peasant Bread’ and then that will have to move up on the list!

I lovelovelove your current book and am squealing with delight about the new! October seems SO far away! I have recommended your strategies (and books, naturally) to at least a dozen people so far, and I will definitely be giving them as gifts to people. My family and I have been trying to cut out high fructose corn syrup for so long, but bread has been a lone holdout because natural breads are so expensive and only seem to last a few days. This is absolutely wonderful! We love the wholesomeness of the breads as well as the fact that we can control (and know!) exactly what goes into each bite. I had tried bread-making before, and it’s just too time-consuming for parents of a new infant, but we all want to eat healthy, natural, and still tasty food. I simply cannot wait until your new book, and I look forward to any new pre-release recipes you post to this website. Thanks a million times!

OK, that’s it. I’ve been procrastinating buying your first book, and now you’ve come up with a second! I’m ordering ABin5 as soon as I finish this note. And I’ll be cleaning out my refrigerator this weekend to make room for a bucket.
I’ve been a big fan of a particular author’s bread machine books because of the variety and the fact that she is meticulous about recipe testing, but the crumb produced by bread machines is just too consistent and “Wonder-like.” Nothing interesting ever happens underneath that ubiquitous crust.
I can’t wait to try the 5 Minutes a Day method (I know I don’t have to wait for the book to arrive to get started, but I DO have to clean out my fridge first, LOL). So, without having tried it yet, I will proclaim my favorite bread to be the ABin5 Master Recipe! (If it’s got crusty crust and chewy crumb I’m bound to love it!) …although the European Peasant Bread sounds really yummy, too…. Oh no! How am I going to be able to choose just one?

Love the semolina recipe. Had just a tad left, and so made 5 little sticky buns when my grandkids were here. The youngest girl is a VERY suspicious eater, and was sure she wouldn’t like to even taste one. But since she saw a Craisin in it, she took a bite. Then another. Then she grabbed onto the whole bun and wouldn’t let go til she ate the whole thing.
My adult son was so impressed with the bread, that he came over for a lesson in how to make it. He was going on a week long raft trip with 14 people and wanted to make the Naan bread for his meal duty. Everyone LOVED the hot, fresh bread with their jambalaya, and having to roll it out with a cold beer can wasn’t the worst thing.
Wonderful book…it was a great piece of luck for me that I chose it instead of several others when I was browsing through the bookstore. I didn’t need ANY cookbook, I thought. But yours has really changed our mealtimes!
And a quick P.S. about those who mention waistlines and calories. For us it’s been a very good thing, because we can make a half-recipe, then bake just a few mini brötchen for a meal, and not be tempted to eat extra slices. Works GREAT!

I am so enamored by the master recipe for a boule, which I have modified (with your help) to use my sourdough starter, that I have to admit that I have not actually made any of the other recipes in the book, I’ve only read about them, and I think about them. I LOVE your bread baking process. I make it every week for the Farmer’s Market and it is the bread that always sells out first! My favorite is the European Peasant Bread. I make it with more whole wheat and rye flour than your recipe calls for. I have found that I am able to work with it easier if I work with wet hands rather than floured hands. Maybe it’s the addition of extra whole grain flours that makes the difference, but it is incredibly easy to work with if I use wet hands.
I am SO looking forward to your new book as I bake almost exclusively with whole grains and it’s taken lots of experimenting to change your recipes in ABin5 to my specs. Looking forward to benefitting from YOUR experiments!!!

I absolutely love the European Peasant dough. I’ve even used it for English Muffins! Also if you have leftover roasted garlic hanging around, definitely make a batch of the Roasted Garlic Potato Bread. Yum! As a matter of fact, go roast some garlic so you can make the dough. It’s that good!

I just love to bake bread but with commitments and a busy life style I find it too taxing to bake every weekend. I love to make artisan breads, as well, but I find the normal 2 day process is frustrating when baking only on weekends. And, to top it all off, I prefer to use a slack dough because it produces such a wonderful crumb. Guess what, your book fits every need I have. Thanks so much for all your efforts! I am very excited to get the new book in October.

I discovered your basic boule recipe when a friend linked to it at http://www.motherearthnews.com/Real-Food/Artisan-Bread-In-Five-Minutes-A-Day.aspx. I’ve been baking my own bread every day since! It’s so simple and so much better than any bread I could buy – besides taking less time.
Like Claudine I found it too much faff to measure everything out in cups, but I’ve found 1kg flour, 750ml water and 4tsp yeast and salt works a treat (the quantities are about 10% smaller than in the original recipe).

I love to cook and am constantly accumulating more cookbooks. I will say however that bread has never been my thing. I have a bread machine and have always been disappointed with the results. I heard about this in a daily blog I subscribe to and was skeptical. I went to the bookstore but they wanted $27 for this book which I wasn’t willing to pay since I didn’t think it would be any different from my other breadmaking attempts. In my websurfing I found another site that had your master recipe posted. (Zoe had even posted some helpful tips so thank you by the way for allowing that recipe to stay posted) I gave it a try yesterday and all I can say is that I will never by bread like that from the store again! It came out wonderful! This morning I woke up and started a try on the whole wheat sandwich bread although I messed it up a little so not sure how it will turn out. I forgot to add the water until after I added the flour so it was pretty lumpy. Anyway, I am buying the book today and pre-ordering the new one! I know what I am getting everyone for Christmas gifts!

We’ve tried several of the recipes, and love them all—but our favorite is the East European Potato Rye. It’s to die for! So moist and stays that way–although a loaf doesn’t last for more than 2 days. We tried store-bought “artisan” bread the other day, and were very disappointed….so it’s back to the bucket for me, from now on! Keep up the great work—looking forward to that new book!

Wow. I don’t know if I have a favorite yet; I’m getting my legs under me, so to speak, with basic breads now, trying to adjust to my family’s taste. (My goal? Stop buying supermarket bread. Not so easy with my family’s … finicky … palate.) I’ve stumbled upon all this just now looking for a good brioche, and was supposed to get a lot more done around the house Sunday than reading all the great stuff on the site.

Hey guys, I have to say that Artisan Bread in Five Minutes a Day is really incredible! I was skeptical of the concept but after trying it I’ve become a believer, and I tell everyone I know about it!
My favourite bread is the za’atar flatbread – everytime I’ve made it, it has been a big hit, and the spice is very different and very delicious. Can’t wait for HBin5 in October!

I love your book… It has really inspired me. We all have such busy lives, and I hadn’t made bread in years. Since discovering ABin5 about 6 months ago, I’m thrilled to be able to bake beautiful bread several times a week. The European Peasant bread is my standard “go to” loaf …For a heartier loaf, I substitute in about 1/2 cup of King Arthur Harvest Grains Blend for some of the flour. The Buttermilk bread is also delicious. I can hardly wait until HBin5 comes out!

I was a teenager before I even tasted store-bought bread. As an adult I baked bread in spurts, on for a couple years, off for a couple and I did enjoy the process. However, I am also a bit of a neat freak and have always hated the mess with flour all over the place. I really do envy those other grandma’s who enjoy half a dozen grandkids making cookies and chaos in their kitchens, but that’s just not me! Your ABin5 was created for me! I love the bread I have made so far and look forward to making many more. I am actually good at making the labor intensive kind, I just don’t want to! Thank you for creating this bread. It makes me wonder why I didn’t think of it

I have been baking quite a bit in the oven using your book and LOVE the results. Now that it is warmer out, I have been using your directions for cooking on the grill. That leads me to my new question: Is there any reason not to simply use parchment paper on a stone when cooking bread or pizza in the oven? It seems so much tidier than getting corn meal all over… Would love your thoughts.

I’ve been using and loving your Artisan Bread Book and LOVE it. My mother must eat gluten free bread and I’m wondering just how many gluten free recipes are in your new book. She wouldn’t want to buy a book if it had only one recipe, for instance. Please let me know how easy it would be to bake the GF bread…maybe some ingredients? Would she have to mix up flours (rice, soy. etc). Are there lots of stange and expensive ingredients? Thanks in advance for your time and thanks for your books! Pam Hart

Pam: The number is still in flux, but it looks like there’ll be about 8 recipes that are GF, though some of those will be based on the same doughs. There will probably be 4 or 5 unique dough recipes.
It’s definitely more effort to do GF. You need xanthan gum, and a mixture of flours such as those you mention (not soy).

My favorite was your basic recipe, because I keep a kosher kitchen and will soon be moving to a city in which there are very few kosher breads to be had, and I’d miss the crusty bread from my local bakery. When I made my first loaf from your recipe, I celebrated because I knew I’d be able to have good bread, for the rest of my life, with much less time and effort than I’d thought I’d need .

I’m sure you get this question a lot, however, it still remains a mystery for me. Just what is a non-air tight container. Every container, of food grade storage quality, which I have found, has a lid which fits like a Tupperware cover. To me, that is air tight. I have a large capacity rectangular, low profile, container which I use, but it too has an air tight lid, thus I must leave it ajar. That leads to heavily crusted over dough when stored for longer than a couple of days in the refrigerator. If I close the lid down, even slightly, the dough becomes extremely wet on the bottom; not good.
Where can I purchase containers which meet your requirements? That is, if you were to buy new containers at this moment, where would you go to make that purchase? What type of container would you purchase – size, color, grade, with or w/o lid, shape?

Don: If the plastic container’s lid fits very tightly and approximates an airtight seal, all you need to do is “crack” the lid during the first 48 hours of storage in the fridge. After that, there isn’t much gas produced and usually I can fully seal most of my plastic containers, which allow for a little leakage. Alternatively, you can make a small hole in the lid, or buy a vented container– some plastic storage containers are being made this way to vent steam during microwave cooking. Beer-making buckets are often vented too. I’m not crazy about the wide flat containers because they offer so much more drying surface to the dough– with that crusty result you describe.

I don’t use the container’s lid at first; instead, I put on one of those old-fashioned elasticized covers that look like shower caps. You get a whole box with two sizes for $1 and they’re wonderful for leftovers too.

We have to keep hanging on because we Desperately NEED a decent GLUTEN FREE Bread-roll-pizza dough recipes for our family. I’m hanging our high hopes on this book and will pre-order it asap. I hope your GF recipe is not like others I’ve seen (experiment with variety of flours on your own until you hit right mixture/consistency)…..IF I was already a master baker then I might be able to do so….however, IF that WAS the case then I wouldn’t actually need a recipe or cookbook to tell me so. Thank you in advance……we can’t wait!

We have tried your basic recipe twice. The first time, our 7 year old did all the mixing, and he was so proud that the rest of the family loved (and devoured!) the rolls we made with the dough. The second time, our ten year daughter made the dough, and we had fresh artisan bread with supper. With a family of ten kids, we haven’t actually managed to get any dough into the fridge yet…I think we may need to double or triple the recipe so we can see how it tastes when it develops a sourdough flavor.
We usually made 100% whole wheat sandwich bread, so this is a nice contrast to our usual bread. I can’t wait for your new book to see what recipes you have come up with using whole grains!

Hi Sue,
You can bake as many loaves as your baking stone will comfortably fit, allowing room for the oven spring. As long as your stone is properly preheated you may not need any additional time. This may also depend on your oven. Just go by the color of the crust, when they are deeply brown (like the loaf on the cover of the book) then they are done.

I dont know where to post this question since i cant seem to find my older posts. Please forgive. My favorite recipe in the first book is on pg 76, 100% whole wheat sandwhich bread. I love breads made with honey and 100% whole wheat. Nothing agianst the 75% whole wheat and 25% all purpose flour breads. I just like whole wheat. Well, every time i make it, it hardly rises due to low gluten content. But you all ready know that. Since i am new to bread making, i am curious if adding 3-4 tablespoons of bobs red mill vital wheat gluten and a lil extra water will help this bread out so it is not so flat. I usually turn the oven on for 45 seconds to a minute and then turn it off. I then put the loaf pan with the dough in it to help it rise a lil faster.
If you can please let me know if adding the wheat gluten and extra water will help me.
Thank you so much for teaching me how to make bread. All my neighbors want me to teach them now.. I tell them that i had private lessons from Zoe and Jeff!

Hi Matt,
It sounds like you need our new book.
There are lots of 100% whole grain breads with just the combo you are looking for. You can try adding vital wheat gluten and water to your dough and it will just take a bit of play to find just the right ratio. That will certainly help with the rise and denseness of the loaf. We start with about 1/4 cup of VWG per batch, but it will be the amount of water that you will want to experiment with.

I want the new book. Just gotta wait till school is out before i can buy it. Honey wheat bread is my most favorite bread ever. I made the whole wheat brioche last night. I found your post on this site and it had the basic recipe. However, since i am at 4600 feet or so, the crumb is way soft and if i cut slices less than half an inch, they fall apart. Gotta find a way to make a tight firmer crumb so i can make berry pudding with the honey wheat bread.
Thanx for your help. Ill see if my local library has the book. I know they have the first one. I enjoy making bread. especially since i dont have a bread mixer. Hard to justify 300$ for a mixer while i have to pay for school.

Help! Bradley Benn’s Beer bread was tough and didn’t rise. I used dry cider instead of beer, could this be the problem? All ingredients are fresh and new. I let it rise for almost 3 hours on counter top and then overnight in refrigerator. I didn’t do the fried onions mix and free formed the loaves. What can I do next?
