They say that everyone’s Irish on St. Patrick’s Day, and I hope that’s true, because I love the Irish–for their music, their literature, their Guinness Stout, and for their food. It’s been many years since I was in Ireland, but I remember swooning over the fresh, wild salmon, buttered potatoes (of course), and the moist and flavorful brown bread. But brown bread’s not particularly festive (or green!), and Zoe and I don’t have a recipe for classic Irish soda bread, which is made without yeast (for that, I rely on James Beard’s recipe in Beard on Bread— the first bread I ever made). Then Zoe reminded me about our broccoli-and-cheddar buns in Healthy Bread in Five Minutes a Day. Turns out that four-leaf clovers aren’t especially Irish, but they’re very lucky! Sprinkled with cheese, these make a lovely and healthy accompaniment to corned beef and cabbage. One little disclosure– the broccoli doesn’t make it all that deeply green, as you can see. I must admit that I use my Pullman pan quite frequently – there is something about those neat, square pieces that seem to make my sandwich more special. However, I wanted to change things up a bit, and decided to get a little creative. Normally I prefer sweet swirled breads, but sometimes something savory is needed. I found that this French olive spread (tapenade) is just the thing.
Well, I’m just going to come right out and say it: these little brioche danish are so very tasty. They came about after a lazy Sunday morning; I had some whole wheat brioche dough in the fridge, and wanted something sweet that didn’t involve a lot of work. I also happened to have a tube of almond paste, goat cheese, and pistachios, and so the great experiment began. It was delicious from the start, but after a few tries and a little tweaking, a perfect weekend treat was born.
Well it is official, our readers are as obsessed about bread as we are. I know this because so many of you watched a video about dough rising! In fact, I did this post to satisfy the folks using our gluten-free chapter from Healthy Bread in Five Minutes a Day and their desire to see the dough in action. I mix up a batch, let it rise, shape and then bake it. Handling the gluten-free dough is very different then our other recipes, so I hope having a video will be helpful.
We have you mix up your dough in a nice big 6-Quart Food-Storage Container, because over the course of 2 hours it will grow to nearly touch the lid. Some folks have asked exactly what that should look like, so I mixed up a batch of each Master recipe from ABin5 and HBin5, then sat back and watched them rise. I promise this is more fun than watching paint dry, it will show you exactly what your dough should look like and I’ve set it to a little Johnny Cash (Ooops, apparently I can’t do that. Had to switch to something with a little less….copyright).
We also have an exciting announcement to make, especially for those Brits who are baking our bread or people excited to bake with weights.
Our first book Artisan Bread in Five Minutes a Day was translated for British bakers. Yes, it is still in English, but the recipes are converted to weights. They appear in both ounces and metrics. For those of you Americans excited to bake by weights this will be a welcome edition. The book’s title and look are also changed, but the recipes are the same. Five Minute Bread is now available for pre-order on Amazon.com.UK and will be on bookstore shelves in January 2011.
I met Bradley Benn at a pottery class many years ago. He is a master of his craft and a kind and patient teacher to those of us who dabble in clay. Little did I know that he was also a skilled baker, until he showed up in a classic MG with a loaf of fabulous bread. One of the hazards of this career of mine is that people rarely, if ever, bake for me, so this was an especially cherished loaf. He shared not only the bread, but also the recipe. When I decided to put it into Healthy Bread in Five Minutes a Day, I adapted his recipe to 100% whole grains. The dough is made with beer, which gives it a jump start on the sourdough flavors we usually wait for. Then we wrap the dough around sauteed onions, rosemary and walnuts. Together they create a bread with so much character and flavor you can eat it alone, but I love it with sharp cheese, grainy mustard and some sweet ham.
Below you will find my first attempt at a video and the recipe for BBBB. I will show you exactly how to roll the dough and prepare it in the pan so that you get onions in every bite. (This same technique can be used to create the raisin bread from last week’s post)
So many of you have asked for close-up video of someone shaping a loaf (what we called “gluten-cloaking” in the first book). Doing this quick shaping step is the same with whole grain doughs, but the feel is different– it isn’t quite as resilient.
But as you can see in the video, it’s basically the same process with this 100% whole wheat dough (the honey-enriched variation on page 80 of Healthy Bread in Five Minute a Day).

On Amazon, the order window has changed from “Pre-Order” to “Order on Amazon”, and bookstores should have it (if they don’t please ask them to order it). It’s a book we wrote because people posted to us in this website and asked us for it (as in, “can you do something similar with more whole grains?”).

As many of you know Jeff and I have spent the past year working on a new book, Healthy Bread in Five Minutes a Day: 100 New Recipes Featuring Whole Grains, Fruits, Vegetables, and Gluten-Free Ingredients
(HBin5). It is a project that started with you! Because of your questions, comments and requests for breads made with whole grains, seeds, nuts, fruits, veggies and even gluten-free ingredients, we set to work to create new recipes. We liked them so well, we decided to do another book. We’ve been playing with ways to make breads that are not only nutritious, but incredibly tasty and still fit into our busy lives. The methods will still be fast, easy and only take 5 minutes, but the results are wonderful breads made with ingredients that will keep us happy and healthy, no matter our dietary needs. Who better than a pastry chef and a doctor to write such a book?
Writing a cookbook takes a long time, not only to test and retest and then test again the recipes, but the editing and designing of the book after we write it. Although it is nearly done we still have more work to do before it comes out this fall. HBin5 will be available in the book stores on October 27th of this year. In the mean time Amazon has posted it for pre-orders for those of you who want to avoid the mad rush at the book stores! 😉
